They're delicious, but it's hard to get people to try them after they've seen them growing. So we usually sell them pre-sliced. Hand-of-the-woods, we call them. If you say it fast, people think it's another variety and don't ask a lot more questions. But to be honest, I don't know how we get away with that because these taste a lot more like shiitake, if you ask me. Admittedly if you get a piece with a bit of fingernail, it's jarring. Too chewy, those bits. But probably the most flavorful. It's a trade-off. Great in soups and... where you going?
